Sorry I have been so absent lately.
My energy, my mind, and my body, have been dedicated to fighting off an infection, recovering from sun exhaustion, battling a stomach parasite, trying, failing, then trying again to let go of someone from my past, and making a video for the first time in my life… did I mention I struggle with perfectionism?
I feel very, very tired.
But I have really, really missed all of you. I have really missed this space. And I hope that by the weeks end, the video completed, perhaps after ingesting more antibiotics, I will be back to my normal posting schedule.
Today I wanted to share with all of you a recipe I made back in Montezuma. Just the thought of it makes me feel healthier. Makes my day feel brighter. Perhaps I’ll make it this afternoon in between video edits.
Tropical Rainbow Slaw
1 cup thinly sliced or shredded purple cabbage
1/2 peeled and diced cucumber
1/2 thinly sliced large carrot, or a handful of baby carrots
1/2 cubed large ripe mango
1/2 cubed buttery ripe avocado
for the dressing
Juice from 1/2 lime
Small squeeze of honey
Sprinkle of salt
Drizzle of olive oil
A big handful of chopped fresh basil and cilantro
Toss dressing with chopped fruit and vegetables. Pile high on a plate. For a more substantial meal top with grilled chicken, shrimp, or toss with black beans and sunflower seeds.
That sounds so YUMMY!! I will definitely be trying this one! Sorry to hear you been so ‘under the weather’, 🙁
but I have to admit that I found it ironic that the thought of a food dish that you associate with Montezuma (as in “The Revenge”) brings you comfort. Anything that brings comfort is always a good thing!

sounds SO good. too bad i don’t have access to the same fresh fruits as i did in montezuma, but i will make it with the same amount of love so it balances out. mucho amor y pura vida chica!!
Ali where are you now? I can’t believe you left Montezuma 😉 If you’re in the states I think you could swap the mango for some fresh oranges and if you miss the creaminess of fresh avocado try greek yogurt.
mmm that sounds so delicious. i am back in massachusetts, for now 😉 leaving montezuma was one of the hardest things i’ve ever done but i know i will be back. are you still in puerto viejo? soak up all of the sun, it snowed here this morning :
